4 - 6 whole beets, red, golden or both

Spray olive oil

½ tsp. salt

Optional: other herbs or spices

Preheat oven to 375 °.

Wash and scrub beets well, then cut them in 1/2" rounds.

Line a cookie sheet with parchment paper.

Spray generously with olive oil.

Sprinkle the oil evenly with salt.

Sprinkle any additional herbs or spices if you like. Ex. Turmeric, curry, garlic salt, chipotle pepper, cayenne pepper, mixed Italian herbs.

Place the beets, cut side down, on the olive oil and spices.

Spray with olive oil and dust with salt on the top as well.

Bake for 30 to 45- minutes or until they are soft and carmely.

They should be easy to pierce with a knife without much effort.

Beets can be eaten as a side dish, a main dish, diced and tossed in salads, placed on top of steamed kale or eaten with their own steamed greens.
