MARINATED BEET SALAD

3- large beets, red or gold or both

½- cup slivered red onions

¼- cup balsamic or raw apple cider vinegar

1/8- cup olive oil

½- tsp. salt

¼- tsp. pepper

1- tsp. maple syrup, coconut sugar or other sweetener

 

Cut off the tops of the beets and wash well.

Cut them in half and boil them for about 25- minutes or until tender.

Put slivered onions in the bottom of a bowl.

Cover with vinegar, olive oil, salt, pepper and sweetener.

Drain the water and add cold water to cool them enough to simply slip the peel off.

While they are still warm, cut into ¼- inch bite sized slices and place over the onion and dressing.

Let stand for 15- minutes until the heat of the beets, softens the onions.

Stir and enjoy.
