SASSY SALMON

1- pound wild caught salmon  

½- cup lemon juice

1/8- tsp. garlic powder

¼- tsp. salt

½- tsp. lemon pepper

1- Tbsp. Italian Herbs (rosemary, oregano, basil)

10 to 12- thin, round, lemon slices

 

Spray the bottom of a baking pan with olive oil.

Place the salmon in the pan.

Pour lemon juice over salmon.

Sprinkle the garlic powder, salt, lemon pepper and Italian herbs.

Cover salmon with lemon slices and then make a tent of aluminum foil, being careful not to touch the salmon with the foil.

Bake at 400º until tender and pink. 12 - 20 minutes depending upon the thickness and desired doneness.
